New crêperie brings            flavour of France to the Market Hall
A taste of          France has come to          Shrewsbury Market Hall with the opening of an authentic          crêperie.
Les Crêpes De          Sophie, specialising          in traditionally made French crêpes and Belgian waffles, has          been launched by          Frenchwoman Sophie Carron and her English partner Mathew          Hocking.
Also on the menu          of the colourful          eatery and takeaway are authentic milkshakes made with real ice          cream, Welsh          fairtrade tea, including ‘Les Crêpes de Sophie’s own Breakfast          blend, locally          roasted coffee and artisan cider and Belgian beer.
“In our shop we          have created          an atmosphere for people to relax, enjoy a crêpe and, if they          want, they can speak          French with Sophie – she’s starting to forget!” said Mathew.
All crêpes are          made fresh          using local ingredients. Fillings range from the classic, such          as Nutella and          lemon & sugar, and specialities of Sophie’s home region like          Speculoos,          made with cinnamon & ginger paste, through to Sophie’s own          fillings          including apples and sultanas cooked in cider and topped with          vanilla ice cream.          
“Cider has          always accompanied          crêpes particularly well and for our shop we’ve sourced some of          the best cider          from Herefordshire and South Wales,” added Sophie.
To reflect          Sophie’s roots in          Flanders, the crêperie stocks a selection of some rare Belgian          beers, such as          Westvleteren and St Bernardus. 
Situated on the          first floor          of the Market Hall, in Claremont Street, Shrewsbury, Les Crêpes          De Sophie can seat          12 people and most crêpes and drinks are available to takeaway.
